Fall is upon us. At least I think so. The weather man says we could be back in the 80's soon but we all know how inaccurate they are! LOL!
I got an email today from the GlutenFreeHomemaker.com She is having guest bloggers this month to introduce squash recipes. I am so excited. I love squash and am looking forward to getting some new yummy recipes.
Don't forget to check out the links at the bottom of my blog. Also, look for a new lentil recipe soon. I made some yummy lentil and wild rice soup a couple of days ago. Problem is I need to start writing down what I put in so it can be replicated for others! :)

Making a Habit
How do you make a habit. Not only out of doing a GF diet, but at doing a daily post.
I thought being a stay at home mom would give me plenty of time and incentive to get on here every day and blog about my diet experiences. Wow, who knew how lazy I can be?!?!
Was on vacation for about a month. I did really good until the end. I had some gluten because it was just easier to hit the Burger King and get a cheeseburger than to try and find something GF. I paid for it. By the time we were home my knees were killing me and I started having restless leg syndrome again. I am now GF again and starting to feel better again already.
My hardest struggle so far has been finding a GF bread that I like. I refuse to pay $6 a loaf all the time for bread. Udi's is really good but the price is crazy. I found a recipe on gingerlemongirl.com that is really good. Hubby figured out that adding a little more water helped it rise and be a bit lighter too.
I am just disgusted with the whole health food industry. I can buy a can of cream of mushroom soup from campbell's for around a buck. To get GF I have to spend $2.99. You can not tell me it costs almost $2 just to put rice flour instead of wheat flour. The health food industry really needs to make healthier foods more affordable. I am going to make my own mushroom soup and freeze it for my favorite chicken and rice casserole.
Well, time to look for some more recipes and take care of the twins. Have a great day!!

Beet Chips and Sweet Potato Chips
So, mom and I are trying to make sweet potato chips and beet chips. You know like the Terra chips you spend a fortune on in the store. Trial and error I suppose. The sweet potatoes are coming out pretty good but we are struggling with the beet chips. How to get them crisp without being over cooked? I don't know. They look so pretty on the internet recipes. Ours look awful!
Oh and for dinner we are having spaghetti squash and spaghetti sauce and Faina. A bread made from Garbanzo bean flour and chicken broth. Got that recipe from Delight Gluten Free magazine. You can also make it with tomato water instead of chicken broth. Guess I'll try that next time.

Losing weight
I have to say I did not start this journey to lose weight. I had a gastric bypass in January of 2001 because I weighed 400 pounds. I never changed the way I ate. I continued eating high carbs and low protein. Even though with the gastric bypass I cannot eat very much sugar at one time, I learned to work around it by eating a little sugar throughout the day. Needless to say, I lost down to around 215 by May of 2003 when I married my current husband. After battling infertility and finally giving birth to our beautiful twin girls by embryo adoption (a totally different story) I then had a hysterectomy in 2007. That did it. Forced menopause! I gradually began to gain weight all the way up to 257!!! Scary.
Back to this year and the new healthy eating me. I was in terrible health. My left knee was in extreme pain and I could hardly walk up stairs or hills. My right foot was in pain. I was going to physical therapy, I was constantly exhausted and was barely able to take care of my home and family. Enter Mom.
Mom came to stay just before Christmas 2009. After several months of not eating right we began our slow journey. We followed the BODYECOLOGY DIET by Donna Gates. I began to feel better and lose some weight. However, I only lasted 2 weeks!!!!! Crazy. Eat better, feel better. You think I would have learned. Nope. Went right back to eating junk and processed foods.
May 2010. I went to see a local Chiropractor named Dr. Alain Salas. He started me on my road to recovery. Through Applied Kinesiology he diagnosed me as Gluten Intolerant and that I have a fungus in my thyroid. I began by a 10 day anti-candida diet and then moved to my current 90 days grain free. I am now on supplements to rid myself of my fungus and help my thyroid. Oh, and by the way, through another doctor I am now on bio-identical hormone replacement!!
My knee is hardly ever painful anymore and the same with my foot. I have more energy and a better attitude (most of the time!! LOL). But as an added bonus, I have lost 40 pounds this year and 20 of that since going Gluten Free.
Well, guess that gets everyone up to date on my journey. Mom is talking about going home in September and I will once again have to do the laundry! I am grateful she was here and Praise God for her help and love. I am glad she pushed me into getting on a healthy track through diet that got me off all prescription medication. I am glad I am gaining the energy to take care of my home and family again.

What an experience. All these years I have been gluten intolerant and didn't even know it. So many health problems, so many trips to conventional MD's and no one ever caught it until I went to a Holistic Chiropractor. I have been on a candida diet and am now on grain free for 90 days. Starting in September (I can't wait) I am just Gluten Free! Can't wait to try all the great recipes I have found.
I am changing the whole kitchen to GF. If hubby wants gluten he has to eat it somewhere else! I want the kids to be healthy and hubby too. I know one of my twins is a carb addict so going GF for them is going to keep them healthier too.
I am looking forward to this journey. I hope I end up with a blog that can help others become healthier too. Once I figure out this whole blogging thing I hope to add links to the other GF web sites I have found helpful!
